Za'atar

Za'atar mix keeps for weeks rather than months and if you bought any ready mixed a year ago then you should throw it away! The recipe can be easily halved which would probably be sufficient for 2 meals depending on your recipe of course.

Ingredients
  

  • 4 Tbsp Dried thyme dried wild thyme if available
  • 2 tsp Dried oregano
  • 4 tsp Sumac
  • 2 Tbsp Toasted sesame seeds
  • 1 tsp Fine sea salt
  • ½ tsp Freshly ground pepper

Instructions
 

  • If you have sesame seeds in your cupboard that are not toasted then put them in a small frying pan and on a medium heat. Stir a occasionally and continue until the seeds have gone a light shade of brown - not dark. Allow to cool before mixing in with the other spices

Notes

Forager's Tip
If you forage wild thyme or wild marjoram during the summer months, dry it thoroughly and use it in place of the shop-bought herbs. The flavour is often far more aromatic than commercial dried herbs.
For a North African-inspired variation, add 1 teaspoon ground cumin and ½ teaspoon ground coriander to the mix.
