Baked Nectarines with Honey-Thyme Glaze & Shaved Pecorino

Ingredients
  

  • 2 Nectarines

Glaze

  • 2 tsp honey
  • 1 tsp olive oil
  • ½ tsp finely chopped fresh thyme or 1 small sprig
  • Optional: a tiny squeeze of lemon or white balsamic like ¼ tsp
  • pinch of salt
  • twist black pepper optional

Serving

  • pecorino (or parmesan) shaved

Instructions
 

  • Halve nectarines and remove the stones.
  • Place cut-side up on a small baking dish.
  • Brush with the glaze.
  • Roast at 180°C (350°F) for about 15–20 minutes, or until tender and starting to caramelise.
  • Cool slightly, plate, and shave Pecorino or Parmesan on top while still warm.
  • Optional garnish: thyme flowers, crushed pistachios, or a drizzle of extra virgin olive oil.

Notes

You can serve this warm or at room temp, even alongside a crisp tuile or small spoon of ricotta or crème fraîche for contrast.
