Baked Nectarines with Honey-Thyme Glaze & Shaved Pecorino

honey

olive oil

tsp
finely chopped fresh thyme
or 1 small sprig
Optional: a tiny squeeze of lemon or white balsamic
like ¼ tsp
pinch
of salt
twist
black pepper

Serving
pecorino (or parmesan)
shaved
Instructions
Halve nectarines and remove the stones.
Place cut-side up on a small baking dish.
Brush with the glaze.
Roast at 180°C (350°F) for about 15–20 minutes, or until tender and starting to caramelise.
Cool slightly, plate, and shave Pecorino or Parmesan on top while still warm.
Optional garnish: thyme flowers, crushed pistachios, or a drizzle of extra virgin olive oil.
Notes
You can serve this warm or at room temp, even alongside a crisp tuile or small spoon of ricotta or crème fraîche for contrast.
