The Dough

Instructions
Mix the dough ingredients
use a stand mixer with dough hook for about 7 minutes; in a Bread Machine dough setting; or by hand and knead.
Leave to rise in bowl covered with a cloth for 1 hour to 1 1/2 hours
Mix the filling
Put all the ingredients except the sultanas into a bowl and mix with a wooden spoon until smooth.
Add the sultanas and mix through
Make the swirls
Prepare a baking tray, lightly dusting with flour. It will not be baked in this tray.
Prepare a 2nd baking tray by dusting with flour. This will be the one going in the oven
Tip the risen dough on to the baking tray and spread out evenly over the tray.
Spread the filling evenly over the entire width but leaving about 2 cm from the each of the long edges.
Roll up the dough and filling, like a swiss roll, by the long edge
Cut the dough with metal dough scraper into slices about 15-20mm thick and place on the 2nd baking tray (you may need 2 trays)
Cover the swirls and leave to rise. This could take 2 to 3 hours
Bake
Bake in fan oven 180C for 15 mins
Place on a cooling rack.
Mix the ingredients for the icing and drizzle over the swirls
