Citrus Tuile

Ingredients
  

  • 25 g unsalted butter, softened 2 tbsp
  • 25 g icing sugar 2 tbsp
  • 25 g plain flour 3 tbsp
  • Zest of ½ orange or lemon
  • 1 tbsp orange or lemon juice

Instructions
 

Make Batter

  • Cream butter and sugar, then stir in flour, zest, and juice. Chill for 30 min.

Bake Tuiles

  • Preheat oven to 160°C (320°F).
  • Drop ½ tsp batter on a baking sheet lined with silicone or parchment. Spread very thinly into small discs (~6 cm).
  • Bake for 6–8 minutes until golden on the edges.

Shape

  • While warm, drape over a rolling pin or bottle to create a curl. Cool and store in an airtight container.
