Rock Samphire & Courgette Soup

Ingredients
  

  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 courgettes sliced
  • 1 small potato diced (for body)
  • 500 ml vegetable or fish stock
  • 1 small handful of rock samphire blanched briefly if strong

Optional

  • lemon zest, cream, or black pepper to finish

Instructions
 

  • Sauté onion in olive oil until soft.
  • Add courgette and potato, stir for a few minutes.
  • Pour in stock, bring to a boil, simmer 15 mins.
  • Blend until smooth.
  • Add salt and pepper to taste
  • Add samphire, simmer 1 more minute.
  • Add splash of cream or a touch of lemon if you like.
