Rough-Chopped Olive & Garlic Pâté

Ingredients
  

  • 200 g mixed olives black & green, pitted
  • 1 small clove garlic finely grated or mashed
  • 1 –2 tsp capers optional, rinsed if salted
  • 2 tsp lemon juice
  • 2 –3 tbsp olive oil
  • Freshly ground black pepper
  • Optional: a few basil or parsley leaves

Instructions
 

  • Chop the olives by hand into small, uneven bits — keep some texture.
  • Mix with garlic, lemon juice, and olive oil.
  • Add capers (if using), a crack of black pepper, and herbs if you like.
  • Let sit for 15–30 minutes to meld flavours.
  • Serve in a small bowl with the warm garlic toasts alongside.
