Savoury Lentil Sandwich Filling

Ingredients

cooked lentils
green or brown are best; avoid red as they go mushy

tbsp
mayonaise
optional, for creaminess

tsp
Dijon mustard or wholegrain mustard

small shallot or spring onion
finely chopped

tsp
lemon juice or vinegar
½
tsp
ground cumin or smoked paprika
optional
salt & pepper to taste
chopped fresh herbs, parsley, coriander, or chives
Optional
chopped pickles, capers, or grated carrot for texture
Instructions
Mash the lentils roughly with a fork or potato masher — keep some texture.
Stir in the rest of the ingredients to taste.
Let it sit for 5–10 minutes so flavours meld.
Notes
Serving Suggestions:
With rye or sourdough bread and lettuce or sliced cucumber.
Grilled with cheese (vegan or dairy) like a panini.
As a wrap filling with shredded carrot and spinach.
With a dash of hot sauce or harissa for kick.
