Preheat oven to 180°C (350°F).
Cut bread into 1–2 cm cubes (rustic is good).
In a bowl, toss bread with olive oil, garlic, salt, and herbs/spices if using.
Spread on a baking tray in a single layer.
Bake for 12–15 minutes, turning once halfway through, until golden and crisp.
Cool fully before storing in an airtight container.
