zest of 1 orange or lemon
Instructions
Whisk eggs and sugar until pale. Slowly whisk in olive oil, then the liquid and zest.
Fold in flour and baking powder.
Bake in a lined 20 cm tin at 180°C for about 35–40 minutes until firm and golden.
