Mediterranean Olive Oil Cake

  • Cake tin 20cm or 8-inch

Ingredients
  

  • 3 eggs
  • 180 g sugar
  • 120 ml olive oil mild flavour
  • 120 ml milk or orange juice
  • 200 g plain flour
  • 2 tsp baking powder
  • zest of 1 orange or lemon

Instructions
 

  • Whisk eggs and sugar until pale. Slowly whisk in olive oil, then the liquid and zest.
  • Fold in flour and baking powder.
  • Bake in a lined 20 cm tin at 180°C for about 35–40 minutes until firm and golden.
