Mediterranean Olive Oil Cake

- Cake tin 20cm or 8-inch
Ingredients
- 3 eggs
- 180 g sugar
- 120 ml olive oil mild flavour
- 120 ml milk or orange juice
- 200 g plain flour
- 2 tsp baking powder
- zest of 1 orange or lemon
Instructions
- Whisk eggs and sugar until pale. Slowly whisk in olive oil, then the liquid and zest.
- Fold in flour and baking powder.
- Bake in a lined 20 cm tin at 180°C for about 35–40 minutes until firm and golden.
