Simple base marinade for barbecue

Can be used all sorts of foods: tofu, tempeh, chicken

Ingredients
  

Base Marinade (Mild & Versatile)

  • Ingredients:
  • 2 tbsp olive oil
  • 1 tbsp lemon juice or vinegar
  • 2 garlic cloves crushed
  • 1 tsp salt
  • ½ tsp black pepper

Instructions
 

  • Mix and coat food thoroughly.
  • Marinate for at least 30 mins, ideally 2–4 hours.

Notes

Options for Spicing Up:

1. Middle Eastern (Za'atar & Yoghurt Glaze)

Add during grilling or 15 minutes before finishing:
  • Mix 2 tbsp Greek yoghurt, 1 tbsp zaatar, 1 tsp sumac, drizzle of olive oil
  • Brush onto food; finish on indirect heat

2. Chinese (Sweet Soy Baste)

Glaze during final 5–10 minutes of cooking:
  • Mix 1 tbsp dark soy sauce, 1 tbsp honey or brown sugar, 1 tsp rice vinegar, ½ tsp five spice or grated ginger
  • Brush on, allow to bubble and char slightly
Optional: finely chopped spring onion or chilli for extra heat

3. Smoky BBQ (Paprika & Mustard Baste)

Apply repeatedly during grilling:
  • Mix 1 tbsp Dijon mustard, 1 tbsp apple cider vinegar, 1 tsp smoked paprika, 1 tsp brown sugar, splash of water
  • Brush onto food every few minutes while cooking over indirect heat
Optional: add a few drops of liquid smoke or chipotle paste
