Gluten-Free Pancakes - traditional thin style

This is effectively the same recipe as the traditional pancake but using gluten-free flour and a couple of tweaks.
*This recipe works equally with shop bought gluten-free flour or The Bakermans Gluten-Free Plain Flour Mix

Ingredients
  

  • 100 g gluten-free flour*
  • ½ tsp baking powder check gluten-free
  • 2 large eggs
  • 300 ml milk
  • pinch sea salt
  • 1 tbsp sunflower oil plus more for cooking

Instructions
 

  • Put the flour, salt and baking powder in a mixing bowl. Make a recess in the middle and add the eggs and oil. Finally add the milk and mix. I use a hand whisk rather than anything stronger. If using a electric whisk of any kind, keep it gentle.
  • Cover the bowl. Leave the batter to rest for 10 minutes before cooking. This is essential for gluten-free flours.
  • The batter should be thin and pourable, similar to single cream. When using The Bakermans gluten-free flour mix, the batter may thicken slightly on standing. Add a little more milk if needed.
  • Heat up a large frying pan to a medium heat. Add a drop of sunflower oil and spread it around the pan with a piece of kitchen paper. When the pan has reached a uniform medium heat, use a soup ladle (not quite full) to pour a thin layer of the batter into the pan. I do a swirl about three quarters in, around the pan and then quickly tilt the pan, rotating to get a nice thin even layer. Let the pancake cook just over a minute and then turn over and cook for another minute.
  • It seems to be the case that the first pancake never seems to come out very well. The first one seems to condition the pan. The others will be fine! After each pancake, re-oil the pan.
  • Keep the pancakes, stacked on a plate in the oven until you are ready to serve.
  • Top your pancake with whatever you like best, a sprinkle of sugar and lemon, syrup, honey, Nutella (which is gluten-free).
