Griddled Halloumi with Charred Sprouting Broccoli & Chickpeas

Ingredients:

  • Halloumi, sliced and pan-fried or griddled

  • Chickpeas, sautéed with garlic, cumin, smoked paprika

  • Sprouting broccoli, grilled or roasted with olive oil & lemon zest

Serve with:

  • A few of pre-cooked new potatoes, halved and pan-crisped in olive oil

  • Fresh herbs like parsley or mint, and a squeeze of lemon juice

Optional extras:

  • Add a tahini or yoghurt dressing

  • Scatter with toasted nuts or seeds for crunch
