Home-made butter with sea salt flakes

Messy but worth it

Equipment

  • Stand mixer
  • Butter paddles if you have them

Ingredients
  

  • 1 litre Double Cream
  • 2 tsp sea salt crystals

Instructions
 

  • Put the milk in your mixer - and keep mixing and mixing. Just as you think nothing is happening and you should give up, you start to see the butter forming in the milk. Keep going and soon you will have large lumps of butter forming.
  • Pour off the buttermilk and save it for baking.
  • Put the lumps of butter into iced water and squeeze together. Squeeze the butter with your hands forcing out the liquid. Do this until you see no more liquid coming out.
  • Transfer the butter to your work surface and flatten it out. Sprinkle with sea salt crystals. Roll the butter back up and continue squeezing. Use butter paddles if you have them as you will force out more of the buttermilk and the butter will last longer
