
Lemon-Herb Bulgur Wheat
(serves 2–3)

Ingredients
- 100 g bulgur wheat
- 200 ml boiling water or vegetable stock
- zest and juice of ½ lemon
- 1 tbsp olive oil
- 2 tbsp chopped fresh herbs parsley, coriander, or mint
- salt and pepper to taste
- Optional: finely chopped red onion spring onion, or cucumber
Instructions
- Put the bulgur in a bowl and pour over the boiling water or hot stock. Cover with a plate and let sit for 15–20 minutes, or until water is absorbed and grains are tender.
- Fluff with a fork and stir in lemon zest, juice, olive oil, herbs, and any extras.
- Season to taste with salt and pepper.
Notes
Serving Suggestion:
Add a spoonful of yoghurt and tahini sauce
