Moroccan Spice Blend

Ingredients
  

  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika sweet or smoked
  • ½ tsp ground cinnamon
  • ½ tsp turmeric
  • ½ tsp ground ginger
  • ½ tsp cayenne pepper optional, for heat
  • Pinch allspice or nutmeg optional for a more rounded depth
  • salt & black pepper to taste

Suggested Use:

  • Toss vegetables (e.g., carrots, courgette, sweet potato, pepper, chickpeas) in olive oil and 1–2 tbsp of the spice mix before roasting.

  • Add to a tagine-style stew with tomato, onion, and preserved lemon.

  • Stir through couscous or bulgur for a quick side dish.

A splash of lemon juice or a handful of chopped fresh coriander or parsley at the end adds a nice lift.
