Moroccan Spice Blend
Ingredients
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika sweet or smoked
- ½ tsp ground cinnamon
- ½ tsp turmeric
- ½ tsp ground ginger
- ½ tsp cayenne pepper optional, for heat
- Pinch allspice or nutmeg optional for a more rounded depth
- salt & black pepper to taste

Suggested Use:

Toss vegetables (e.g., carrots, courgette, sweet potato, pepper, chickpeas) in olive oil and 1–2 tbsp of the spice mix before roasting.

Add to a tagine-style stew with tomato, onion, and preserved lemon.

Stir through couscous or bulgur for a quick side dish.
A splash of lemon juice or a handful of chopped fresh coriander or parsley at the end adds a nice lift.
