
Baked Nectarines with Honey-Thyme Glaze & Shaved Pecorino
Ingredients
- 2 Nectarines
Glaze
- 2 tsp honey
- 1 tsp olive oil
- ½ tsp finely chopped fresh thyme or 1 small sprig
- Optional: a tiny squeeze of lemon or white balsamic like ¼ tsp
- pinch of salt
- twist black pepper optional
Serving
- pecorino (or parmesan) shaved
Instructions
- Halve nectarines and remove the stones.
- Place cut-side up on a small baking dish.
- Brush with the glaze.
- Roast at 180°C (350°F) for about 15–20 minutes, or until tender and starting to caramelise.
- Cool slightly, plate, and shave Pecorino or Parmesan on top while still warm.
- Optional garnish: thyme flowers, crushed pistachios, or a drizzle of extra virgin olive oil.
Notes
You can serve this warm or at room temp, even alongside a crisp tuile or small spoon of ricotta or crème fraîche for contrast.
