Main
Salmon fillets rubbed with:
Version 1:
- ground coriander
- cumin
- turmeric
- black pepper
- garlic
- lemon zest
Version 2
- 1 tbsp Madras curry powder
- ½ tsp turmeric
- 1 tsp garlic puree
- Juice of half a lemon
- 1 tbsp oil
Pan fried or oven roasted.
Serve with Basmati rice finished with butter.

- Cherry tomatoes
- Spring onions
- Parsley
- Lemon dressing
Extras
- Mint yoghurt
- Mango chutney
- Chilli flakes on the table

Coconut Fish Curry (British-Asian Style)
Not pretending to be Indian, but very enjoyable. The coconut-and-fish combination even if the recipe isn’t Indian.

- curry leaves if available

Heat control
- Keep the curry medium.
- Serve fresh chillies and chilli oil separately.

Coriander, Nigella & Sesame Pita
Reduce the za’atar slightly and add:
- Nigella seeds (kalonji)
- Sesame seeds
Nigella is used across Indian cooking and gives a lovely aromatic note.

Replace some of the za’atar with:
- Toasted cumin seeds
- Cracked black pepper
This pairs particularly well with salmon.
