Rock Samphire & Courgette Soup

Ingredients
- 1 tbsp olive oil
- 1 onion chopped
- 2 courgettes sliced
- 1 small potato diced (for body)
- 500 ml vegetable or fish stock
- 1 small handful of rock samphire blanched briefly if strong
Optional
- lemon zest, cream, or black pepper to finish
Instructions
- Sauté onion in olive oil until soft.
- Add courgette and potato, stir for a few minutes.
- Pour in stock, bring to a boil, simmer 15 mins.
- Blend until smooth.
- Add salt and pepper to taste
- Add samphire, simmer 1 more minute.
- Add splash of cream or a touch of lemon if you like.
