Rough-Chopped Olive & Garlic Pâté
Ingredients
- 200 g mixed olives black & green, pitted
- 1 small clove garlic finely grated or mashed
- 1 –2 tsp capers optional, rinsed if salted
- 2 tsp lemon juice
- 2 –3 tbsp olive oil
- Freshly ground black pepper
- Optional: a few basil or parsley leaves
Instructions
- Chop the olives by hand into small, uneven bits — keep some texture.
- Mix with garlic, lemon juice, and olive oil.
- Add capers (if using), a crack of black pepper, and herbs if you like.
- Let sit for 15–30 minutes to meld flavours.
- Serve in a small bowl with the warm garlic toasts alongside.
