Savoury Lentil Sandwich Filling

Ingredients
  

  • 1 cup cooked lentils green or brown are best; avoid red as they go mushy
  • 1 tbsp mayonaise optional, for creaminess
  • 1 tsp Dijon mustard or wholegrain mustard
  • 1 small shallot or spring onion finely chopped
  • 1 tsp lemon juice or vinegar
  • ½ tsp ground cumin or smoked paprika optional
  • salt & pepper to taste
  • chopped fresh herbs, parsley, coriander, or chives

Optional

  • chopped pickles, capers, or grated carrot for texture

Instructions
 

  • Mash the lentils roughly with a fork or potato masher — keep some texture.
  • Stir in the rest of the ingredients to taste.
  • Let it sit for 5–10 minutes so flavours meld.

Notes

Serving Suggestions:
  • With rye or sourdough bread and lettuce or sliced cucumber.
  • Grilled with cheese (vegan or dairy) like a panini.
  • As a wrap filling with shredded carrot and spinach.
  • With a dash of hot sauce or harissa for kick.
