Savoury Lentil Sandwich Filling
Ingredients
- 1 cup cooked lentils green or brown are best; avoid red as they go mushy
- 1 tbsp mayonaise optional, for creaminess
- 1 tsp Dijon mustard or wholegrain mustard
- 1 small shallot or spring onion finely chopped
- 1 tsp lemon juice or vinegar
- ½ tsp ground cumin or smoked paprika optional
- salt & pepper to taste
- chopped fresh herbs, parsley, coriander, or chives
Optional
- chopped pickles, capers, or grated carrot for texture
Instructions
- Mash the lentils roughly with a fork or potato masher — keep some texture.
- Stir in the rest of the ingredients to taste.
- Let it sit for 5–10 minutes so flavours meld.
Notes
Serving Suggestions:
- With rye or sourdough bread and lettuce or sliced cucumber.
- Grilled with cheese (vegan or dairy) like a panini.
- As a wrap filling with shredded carrot and spinach.
- With a dash of hot sauce or harissa for kick.
