Leek & Potato Soup
Simple, soft and comforting. This is a classic for a reason — gentle flavours, but deeply satisfying.

Ingredients
- 1 tbsp butter or oil
- 2 leeks sliced and washed well
- 2 medium potatoes peeled and diced
- 1 litre vegetable stock
- Salt and black pepper
- splash milk or cream optional
Instructions
- Melt the butter in a pan and gently cook the leeks until soft, without letting them brown.
- Add the potatoes and stir to coat in the butter.
- Pour in the stock and bring to a simmer.
- Cook until the potatoes are completely tender.
- Blend until smooth or leave slightly textured, depending on preference. Add a splash of milk or cream if you like, and season to taste.
Notes
Take care washing leeks — grit often hides between the layers.
