Leek & Potato Soup

Simple, soft and comforting. This is a classic for a reason — gentle flavours, but deeply satisfying.

Ingredients
  

  • 1 tbsp butter or oil
  • 2 leeks sliced and washed well
  • 2 medium potatoes peeled and diced
  • 1 litre vegetable stock
  • Salt and black pepper
  • splash milk or cream optional

Instructions
 

  • Melt the butter in a pan and gently cook the leeks until soft, without letting them brown.
  • Add the potatoes and stir to coat in the butter.
  • Pour in the stock and bring to a simmer.
  • Cook until the potatoes are completely tender.
  • Blend until smooth or leave slightly textured, depending on preference. Add a splash of milk or cream if you like, and season to taste.

Notes

Take care washing leeks — grit often hides between the layers.
This can be kept rustic or blended smooth. Personally I do blend it.
