Carrot & Coriander Soup

A bright, slightly sweet soup with a gentle warmth from coriander. Simple ingredients, but full of flavour.

Ingredients
  

  • tbsp oil or butter
  • 1 onion chopped
  • 500 g carrots peeled and sliced
  • 1 tsp ground coriander
  • 1 litre vegetable stock
  • salt and black pepper
  • fresh coriander chopped

Instructions
 

  • Heat the oil in a pan and cook the onion until soft.
  • Add the carrots and ground coriander and cook for a few minutes to release the flavour.
  • Pour in the stock and bring to a simmer.
  • Cook until the carrots are tender.
  • Blend until smooth, then season and stir through fresh coriander.

Notes

Adjust the coriander to taste — it should be warm and fragrant, not overpowering.
A little butter stirred in at the end gives a softer finish.
