Carrot & Coriander Soup
A bright, slightly sweet soup with a gentle warmth from coriander. Simple ingredients, but full of flavour.

Ingredients
- tbsp oil or butter
- 1 onion chopped
- 500 g carrots peeled and sliced
- 1 tsp ground coriander
- 1 litre vegetable stock
- salt and black pepper
- fresh coriander chopped
Instructions
- Heat the oil in a pan and cook the onion until soft.
- Add the carrots and ground coriander and cook for a few minutes to release the flavour.
- Pour in the stock and bring to a simmer.
- Cook until the carrots are tender.
- Blend until smooth, then season and stir through fresh coriander.
Notes
Adjust the coriander to taste — it should be warm and fragrant, not overpowering.
A little butter stirred in at the end gives a softer finish.
